DATA
Hojicha in figures
Tables the Japan Hojicha Association has counted from what this site publishes. Each one comes with how it was counted and its sources.
How 18 companies label hojicha roast levels
We counted how 18 hojicha sellers divide their products on their official sites. Four described the depth of their roast in words; none published a roasting temperature or time.
Hojicha brewing guides compared (27 of 29 with figures)
We gathered 29 brewing guides (18 tea merchants and manufacturers, 11 public bodies and organisations) and lined up the 27 that give figures. Across 26 of them, leaving out one magazine interview, steeping time varies about tenfold and the amount of leaf about fourfold.
Published caffeine values for hojicha, with test conditions
Published caffeine values for hojicha and other teas, each with the conditions under which it was measured. Japan's composition tables give hojicha 20 mg per 100 mL, the same as sencha.
The 76 places on our hojicha cafe map, by prefecture
A tally of the 76 places the association has checked and listed on its cafe map, not a count of every shop in Japan. They are spread across 43 prefectures; Tokyo has the most, with 8.
